Bistro Cafe History: From an Isla Verde Bakery to Downtown Miami
By the Bistro Cafe Miami Guide editors · Published

On this page
Bistro Cafe looks like a Downtown Miami brunch spot, but its menu was built in Puerto Rico. The cover of the printed menu still says "since 2011," which is the year the first Bistro opened in Isla Verde, next to San Juan. This page puts the cafe's story in order, using press coverage from Puerto Rico and Miami.

A Bakery Family in Aguada
Aguada is a small town on Puerto Rico's west coast, on the opposite side of the island from San Juan. According to a 2023 Miami Herald profile, Jan Karlo Ruiz grew up helping his father at a bakery and pastry shop the family had run for 34 years. He later worked with his mother, who opened a doughnut franchise.
That background shows on the Miami menu. More than a dozen dishes are built on bread: filled croissants, French toast stuffed like a sandwich, waffles used as bread, and the brioche Briochetta. The sourdough vs. brioche guide explains why the bread choice changes those plates so much.
Isla Verde, 2011
The first location opened in 2011 in Isla Verde, the beach and hotel strip in Carolina, a few minutes from San Juan's Luis Muñoz Marín airport. The Herald reported that it started as Bistro Bakery and that Ruiz worked the kitchen himself. A 2017 Metro Puerto Rico article lists the Isla Verde cafe at 29 Calle Júpiter, on Avenida Isla Verde, and describes a menu of more than 100 breakfast, brunch and lunch combinations.
That 2017 article is useful because it shows how far back some Miami dishes go. Two of the summer additions it describes are still on the Miami menu today:
- Chocopancakes: hot chocolate served with mini pancakes. In Miami it's $10, listed under Coffee & Hot Chocolate.
- El Guadalupe: an omelette with roasted carnitas, pico de gallo, avocado, cheese and a touch of guava sauce. In Miami the Guadalupe omelette is $24.
Other 2017 items, like a champagne drink called La Realeza and a hamburger served on an omelette called Don Romeo, don't appear on the current Miami menu.
Downtown Miami, December 2019
On December 26, 2019, Metro Puerto Rico reported that Ruiz and his wife, Tamara Pérez, had opened Bistro Café in Miami after eight years in Isla Verde. The paper gave the address as 1352 NE 1st Ave, in the area it called the Art District, and listed hours of 8 a.m. to 4 p.m. seven days a week. It also mentioned the coffee bar, which carried over from Puerto Rico.
The timing was rough. The Herald later noted the Miami cafe opened only a few months before the COVID-19 pandemic. It stayed open, and the posted hours today are close to the original: 8 a.m. to 4 p.m. on weekdays and 8 a.m. to 5 p.m. on weekends.
The Downtown spot sits a short walk from the Adrienne Arsht Center. The getting there guide covers parking, the free Metromover and how the cafe's hours line up with Arsht matinees.
Coral Gables, 2023
The second Miami-area cafe opened in 2023 at 4155 Laguna St in Coral Gables, one block from the Shops at Merrick Park. The Herald reported that customers from Kendall and Pinecrest had been asking for a location farther south. The paper described the Gables cafe as more intimate than the Downtown room, with a terrace and a lit sign reading "Jíbaro in the City."
In that same article, Ruiz said breakfast is available at any hour and that the coffee comes from Puerto Rico. The Herald also mentioned that the cafe's Instagram listed Broward and Orlando locations as coming soon. Whether those opened is not covered here; check the restaurant's own accounts for current locations. For how the two Miami-area cafes compare, see Downtown vs. Coral Gables.
Family Names on the Menu
Some menu names point back to the family. The Herald noted that a stuffed avocado called "Freddy Pérez" is named after Ruiz's father-in-law, and the Miami menu also lists a Freddie Perez Omelette with fried pork, sweet plantain and mayo-ketchup. A scrambled egg plate called the Ruíz shares the owner's surname. The dish names guide goes through the rest of the menu.
National Attention, 2024
In 2024 Yelp put Bistro Cafe at no. 73 on its Top 100 Brunch Spots list for the U.S., one of three Miami restaurants on it, as reported by the Miami Herald. Lists like that are built from Yelp review data, which is a different thing from a critic's pick; the Best Brunch in Miami guide explains how the big rankings are made.
What Carried Over From Puerto Rico
- Breakfast all day. Both the 2017 and 2023 coverage describe a breakfast and brunch menu with no cut-off time.
- A very long menu. More than 100 combinations in Isla Verde in 2017; close to 100 dishes in Miami today.
- Puerto Rican flavors. Trifongo, the Tripleta, mayo-ketchup and sweet plantain show up across the menu.
- Coffee from the island. The owner told the Miami Herald in 2023 that the coffee comes from Puerto Rico; the drinks are listed on the menu page.
